Keto Recipe: Shaved Brussel Sprouts Salad with Lemon Thyme Vinaigrette
Serves 4 - 162 Calories Per Serving
Ingredients:
• 1 lb Brussel sprouts, shaved
• 1/4 cup olive oil
• 1 Tbsp apple cider vinegar
• 1/4 tsp dijon mustard
• 1/4 tsp whole grain mustard
• Juice from 1/2 of a lemon
• 4 sprigs of fresh thyme, leaves only
• Salt to taste
Directions:
1. Fill a large saucepan with water and bring to a boil. Add the shaved Brussel sprouts and cook for 7-10 minutes or until crisp tender.
2. While the sprouts are cooking, begin your vinaigrette by whisking the remaining ingredients (excluding the salt) in a small bowl.
3. When the Brussel sprouts are done, immediately remove them from the hot water and place them in an ice bath to stop the cooking process. After a minute or two, drain the sprouts and place them in a bowl.
4. Toss the sprouts with the vinaigrette, season with salt, and serve. Hot or cold, this salad is sure to be a crowd pleaser!
