Keto Recipe: Steak Skewers with Chimichurri Sauce

Ingredients
• Skewers
• 1 1/2 lbs beef tenderloin, cut into cubes
• 1 red onion, cut into large cubes
• 1 pint cherry tomatoes
• 1 Tbsp extra-virgin olive oil
• Salt and pepper to taste
• Chimichurri Sauce
• 2 garlic cloves
• 1/2 tsp salt
• 1 1/4 cups fresh cilantro, chopped
• 1 1/4 cups fresh parsley, chopped
• 1/4 cup fresh oregano, chopped
• 1/2 tsp red pepper flakes
• 1/3 cup red wine vinegar
• 1/2 cup extra-virgin olive oil
• additional salt and pepper to taste
Directions
1. Begin with the sauce by smashing the garlic on a cutting board. Add the 1/2 tsp of salt and continue to work the garlic into a paste.
2. Put the garlic in a small bowl and add in the rest of the ingredients, whisking everything together until it is well mixed. Set aside.
3. To make the skewers, arrange four or five pieces of beef, two or three pieces of onion, and two tomatoes on each skewer.
4. Brush the skewers on both sides with the olive oil and season with the salt and pepper. Working in batches, cook on a preheated grill for about 4-5 minutes per side. Double check with a meat thermometer to ensure the meat is cooked to your preference (rare beef should have an internal temperature of 145ºF, medium at 165ºF, and well done at 170ºF).
5. Serve immediately and garnish generously with the sauce.
