Mediterranean Chickpea Salad | Serves 4-6

This Mediterranean Chickpea Salad is a perfect blend of fresh vegetables, protein-rich chickpeas, and flavorful herbs. It's a versatile dish that can be served as a main course or a side dish. Ingredients - Salad:

•   2 cans (15 oz each) chickpeas, drained and rinsed

•   1 cucumber, diced

•   1 pint cherry tomatoes, halved

•   1 red bell pepper, diced

•   1 small red onion, finely chopped

•   1/2 cup Kalamata olives, pitted and halved

•   1/4 cup fresh parsley, chopped

•   1/4 cup fresh mint, chopped

•   1/4 cup crumbled feta cheese (optional)

 

Ingredients - Dressing:

•   1/4 cup extra virgin olive oil

•   2 tablespoons fresh lemon juice

•   1 tablespoon red wine vinegar

•   1 teaspoon Dijon mustard

•   1 garlic clove, minced

•   Salt and pepper to taste

 

Directions:

1.      Prepare the Vegetables: Start by washing and preparing all the vegetables. Dice the cucumber, red bell pepper, and red onion. Halve the cherry tomatoes and Kalamata olives. Chop the fresh parsley and mint.

2.      Mix the Salad: In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, Kalamata olives, parsley, and mint. If you're adding feta cheese, crumble it into the bowl as well.

3.      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

4.      Dress the Salad: Pour the dressing over the chickpea and vegetable mixture. Toss everything together until the ingredients are evenly coated with the dressing.

5.      Chill and Serve: For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together. Serve cold and enjoy!
