One-Pan Chicken and Vegetable Bake

•   4 boneless, skinless chicken breasts

Directions:

1.      Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

2.      Prepare the Chicken: Place the chicken breasts on the prepared baking sheet and drizzle them with olive oil. Season both sides with minced garlic, dried thyme, dried rosemary, salt, and black pepper.

3.      Add the Vegetables: In a large mixing bowl, combine the halved baby potatoes, broccoli florets, sliced bell peppers, and red onion. Drizzle with olive oil and season with salt and black pepper. Toss the vegetables until they're evenly coated with the seasonings.

4.      Arrange on the Baking Sheet: Arrange the seasoned vegetables around the chicken breasts on the baking sheet, ensuring they're evenly distributed. Spread them out in a single layer to allow for even cooking.

5.      Bake: Transfer the baking sheet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. You can check for doneness by inserting a thermometer into the thickest part of the chicken breasts—it should register 165°F (75°C).
