Ingredients:

•   1 cup of shredded zucchini

•   1 cup of shredded carrots

•   1/2 cup of chopped spinach

•   1/4 cup of chopped bell peppers (any color)

•   1/4 cup of chopped green onions

•   1 cup of all-purpose flour (or almond flour for a gluten-free option)

•   1 teaspoon of baking powder

•   1 serving of Bodē Pro’s 3 Second Salad

•   1/2 teaspoon of garlic powder

•   1/2 teaspoon of onion powder

•   1/2 teaspoon of paprika

•   Salt and pepper to taste

•   2 large eggs

•   1/4 cup of milk (dairy or non-dairy)

•   Cooking spray or oil for waffle iron

 

Directions:

1.      In a large mixing bowl, combine the shredded zucchini, carrots, chopped spinach, bell peppers, and green onions. Mix well and set aside.

2.      In a separate bowl, whisk together the flour, baking powder, garlic powder, onion powder, paprika, salt, and pepper. Open up the 3 Second Salad capsules and add the beadlets to this mixture.

3.      Add the flour mixture to the veggie mix and stir until well combined.

4.      Beat the eggs and milk together in a small bowl, then add them to the veggie and flour mixture. Stir until the batter is thoroughly combined.

5.      Preheat your waffle iron according to the manufacturer's instructions. Once heated, lightly coat the waffle iron with cooking spray or oil.
