Veggie Lunch Wraps
If you are looking for a great lunch option to pack in your paper bag, look no further than this delicious and hearty veggie wrap!
Ingredients:
• 2 cups of cooked chickpeas, drained and rinsed
• 3 kale leaves, stemmed and finely chopped
• 6 Brussels sprouts, thinly sliced
• 1/2 cup of radicchio, thinly sliced
• 1 ripe avocado, sliced
• 1/4 teaspoon of salt
• 1/4 teaspoon of pepper
• 8 Tablespoons of dijon mustard
• 4 large tortillas
Directions:
1. In a small bowl, mash the chickpeas with the salt and pepper. Set aside.
2. In a medium bowl, toss the kale, Brussels sprouts, and radicchio together.
3. Assemble the wraps by spreading 2 Tablespoons of dijon mustard on each tortilla before evenly dividing the chickpeas, salad mix, and avocado between the tortillas. Fold the tortillas around the filling, and enjoy!
