Lemon Roasted Potatoes with Feta

Serves 6

If you are ready to feel those cozy fall vibes, check out this delicious side dish to warm you up on a cool day!

 

Ingredients-Potatoes:

•   2 lbs of red potatoes, quartered

•   1/4 cup of extra virgin olive oil

•   3/4 teaspoon of kosher salt

•   1/2 teaspoon of garlic powder

•   3/4 teaspoon of dried oregano

•   1/2 teaspoon of onion powder

•   1/4 teaspoon of black pepper

•   1 lemon, juiced

 

Ingredients-Feta Topping:

•   1/2 cup of feta cheese, crumbled

•   1/4 cup of sun dried tomatoes, chopped (the dried kind, not the kind stored in oil)

•   1 Tablespoon of fresh oregano, chopped

•   1 Tablespoon of fresh basil, chopped

•   Zest of 1 lemon

 

Directions:

1.      Preheat the oven to 400ºF.

2.      Toss the potatoes in a large bowl with olive oil and potato seasonings until the potatoes are evenly coated.

3.      Spread the potatoes evenly across a baking sheet and drizzle with the lemon juice.

4.      Roast for 60 minutes or until tender and golden brown.

5.      While the potatoes are roasting, stir together the ingredients for the feta topping in a small bowl and set aside.

6.      When the potatoes are done, transfer them to a serving dish and sprinkle with the feta topping.

7.      Enjoy!
