Grapefruit, Lime, and Mint Yogurt Parfait

Looking for a light, sweet treat as the days start to get warmer? Then look no further than this delicious parfait for a tasty way to start the day or a delicious indulgence!

 

Ingredients:

•   4 large red grapefruit

•   4 cups of plain yogurt (you can use a dairy-free option if you prefer)

•   2 teaspoons of grated lime zest

•   2 Tablespoons of lime juice

•   3 Tablespoons of honey

•   Torn fresh mint leaves

 

Directions:

1.      Cut a thin slice from the top and bottom of each grapefruit and stand the fruit up on the cutting board. With a knife, cut off the peel and outer membrane from the grapefruits. Cut along the membrane of each segment to remove the fruit.

2.      In a large bowl, mix the yogurt, lime zest, and lime juice.

3.      Layer the grapefruit and yogurt mixture into six parfait glasses in alternating layers. Drizzle with honey, top with mint leaves, and enjoy.
