Keto Bacon Sushi

Yields 12 - 130 Calories Per Serving

Wrap up this tasty treat and enjoy for a quick snack on the go!

 

Ingredients:

•   6 slices of bacon, each cut in half

•   2 cucumbers, thinly sliced

•   2 medium carrots, thinly sliced

•   1 avocado, sliced

•   4 oz of cream cheese, softened

 

Directions:

1.      Preheat the oven to 400ºF and line a baking sheet with aluminum foil, ideally fitting it with a cooling rack if available. Lay the bacon strip halves across the rack and bake until slightly crisp but still pliable, about 11 to 13 minutes.

2.      While the bacon is cooking, cut the cucumbers, carrots, and avocado into pieces to fit the width of the bacon.

3.      After the bacon is done baking and cool enough to touch, spread an even layer of cream cheese on each slice. Evenly divide the vegetables between the bacon slices and roll tightly.
