Keto Recipe: Instant Pot Pulled Pork

Ingredients:

•   3-4 lbs of pork butt or pork shoulder

•   1 cup of water

•   2 Tbsps of smoked paprika

•   2 tsps of salt

•   1 tsp of ground black pepper

•   1/2 tsp of garlic powder

•   1/2 tsp of ground cumin

Directions:

1. Mix the smoked paprika, salt, pepper, garlic powder, and ground cumin in a small bowl and set aside. Pat the pork dry with paper towels, trim off the excess fat, and remove the bone if present.

2. Cut the meat into roughly eight even pieces. Toss the pork pieces in the seasonings until well coated.

3. Add the water to the Instant Pot and distribute the pork pieces over the water (no trivet or rack needed). Secure and seal the lid.

4. Cook the pork at a high pressure for one hour, followed by an additional ten minutes of natural release. Finally, manually release the remaining pressure by turning the knob to the venting position.

5. Once the pressure is fully released and you can safely open the lid of the Instant Pot, transfer the pork to a large bowl while leaving the liquid in the pot. Use two forks to shred pork and toss with your favorite barbecue sauce if desired.
