Apple Cider Glazed Chicken

As with every fall season, pumpkin spice seems to be everywhere. However, pumpkins aren’t the only autumn star. Apples are another wonderful flavor for fall of which we intend to take full advantage.

Ingredients: Baked Chicken

•   2 large chicken breasts (approx. 8 oz each)

•   ½ tsp salt

•   ¼ tsp pepper

•   Olive oil 

 

Ingredients: Apple Cider Glaze

•   ⅔ cup apple cider

•   1 Tbsp Dijon mustard

•   1 tsp chili pepper flakes (optional)

Directions

1.      Preheat the oven to 450℉ and line a 9”x9” baking dish with foil (shiny side up).

2.      Brush both sides of the chicken breasts with the olive oil and season the chicken with the salt and pepper. Put the chicken in the prepared baking dish and bake, uncovered, for 15-20 minutes, until the internal temperature reaches 165℉. Set aside the chicken on a platter and cover loosely with foil (shiny side down) for 5-10 minutes to let it rest.

3.      While the chicken is baking, begin preparing your glaze. Pour the cider into a pan and bring to a boil. Reduce to a simmer and stir in the Dijon mustard. You may also add the chili flakes here if you enjoy a little bit of heat. 

4.      Reduce the mixture, stirring continually, for about 4-6 minutes. You will know it’s done when the cider takes on a syrupy texture and can coat the back of a spoon. Once it reaches that consistency, remove it from heat. 

5.      Coat each chicken breast with the glaze, then slice and serve.

Enjoy alongside roasted veggies or grilled apples if you’d like to maintain the theme!
