Keto Recipe: Marinated Cucumber Salad with Dill Cream Sauce

Serves 4 - 112 Calories Per Serving

Check out this easy summer keto recipe that will keep you cool as a cucumber!

Ingredients:

• 2 large cucumbers

• 2 Tablespoons of extra virgin olive oil

• 3 Tablespoons of apple cider vinegar

• 1 Tablespoon of Greek yogurt

• 1 clove of garlic, minced

• 1 Tablespoon of fresh dill, minced (plus a bit more for garnish)

• 1/2 of a red onion, sliced

• Salt and pepper to taste

 

Directions:

1. Peel and thinly slice the cucumbers. Arrange the slices with the red onion in a large, shallow dish.

2. In a small bowl, combine the olive oil, apple cider vinegar, Greek yogurt, garlic, dill, salt, and pepper. Mix thoroughly and vigorously to emulsify it before pouring it over the cucumber and red onion slices.

3. Cover and marinate for 2-3 hours in the refrigerator.

4. Bring the chilled cucumber salad to room temperature before serving and garnish with additional chopped dill if you’d like, and enjoy!
